Description

A delicious and easy meal combining tender chicken, fluffy rice, and colorful veggies, topped with spicy mayo for an exciting kick.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup jasmine rice
  • 1 cup mixed fresh veggies (e.g., bell peppers, carrots, broccoli)
  • 1/4 cup mayo
  • 2 tbsp Sriracha or another hot sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat and add diced chicken. Season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  3. In a small bowl, mix together the mayo and Sriracha to create a spicy drizzle.
  4. Assemble the bowl by placing a serving of jasmine rice at the bottom, then top with cooked chicken and fresh veggies.
  5. Drizzle the spicy mayo over the top and garnish with chopped green onions. Serve immediately.

Notes

Use pre-cooked rotisserie chicken for a quicker option. Store leftovers in an airtight container in the fridge for up to 3 days. Adjust Sriracha for spice levels.
