- 1 cup jasmine rice
- 1 cup mixed fresh veggies (e.g., bell peppers, carrots, broccoli)
- 1/4 cup mayo
- 2 tbsp Sriracha or another hot sauce
- 1 tbsp olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Cook the jasmine rice according to package instructions.
- In a skillet, heat olive oil over medium heat and add diced chicken. Season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- In a small bowl, mix together the mayo and Sriracha to create a spicy drizzle.
- Assemble the bowl by placing a serving of jasmine rice at the bottom, then top with cooked chicken and fresh veggies.
- Drizzle the spicy mayo over the top and garnish with chopped green onions. Serve immediately.
Notes
Use pre-cooked rotisserie chicken for a quicker option. Store leftovers in an airtight container in the fridge for up to 3 days. Adjust Sriracha for spice levels.
