Description

A budget-friendly and healthy alternative to the cafe version, these egg bites are packed with flavor and protein, perfect for breakfast or meal prep.


Ingredients

Scale
  • 10 eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables of your choice (bell peppers, tomatoes, onions)
  • 1/2 cup cooked crumbled bacon or sausage (optional)
  • 1/2 cup chopped turkey (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a muffin tin with non-stick cooking spray.
  3. Chop up any vegetables you are using and precook bacon (if using), then chop it into pieces.
  4. In a medium mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
  5. Place a handful of chopped veggies, meat, and a bit of cheese into each muffin cavity.
  6. Pour or spoon the egg mixture into the muffin tin, filling each cup about 3/4 of the way full.
  7. Stir each muffin cavity to ensure ingredients are well mixed.
  8. Bake for about 12-18 minutes, or until set and slightly golden on top.
  9. Let cool for a few minutes before removing from the tin.
  10. Serve warm, and store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.

Notes

Customize flavors with your favorite vegetables or meats. For creaminess, consider using half-and-half.
