Ingredients

  • 1 pound smoked sausage (halal-certified, no pork)
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the baby potatoes and slice the smoked sausage.
  3. In a bowl, mix the ranch seasoning and other spices.
  4. Toss the potatoes with olive oil and part of the seasoning mixture.
  5. Spread the potatoes on a baking sheet and add the sliced sausage on top.
  6. Roast in the oven until everything is golden and tender, about 25-30 minutes.
  7. Top with cheese and return to the oven until the cheese is melted, around 5-10 minutes.
  8. Serve warm, optionally with sour cream and fresh parsley.

Notes

For a variation, swap the smoked sausage for turkey or beef, and experiment with different cheeses and vegetables.
