Instructions
- Toast the whole grain bread until golden brown.
- While the bread is toasting, mash the ripe avocado in a bowl until creamy, leaving some chunks for texture.
- In a non-stick skillet, cook the eggs to your preference (scrambled, fried, or poached).
- Slice the cherry tomatoes in half.
- Spread the mashed avocado on the toasted bread.
- Top with the cooked eggs and cherry tomatoes.
- Season with salt and pepper to taste.
