Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1/4 cup cherry tomatoes
  • Salt and pepper to taste

Instructions

  1. Toast the whole grain bread until golden brown.
  2. While the bread is toasting, mash the ripe avocado in a bowl until creamy, leaving some chunks for texture.
  3. In a non-stick skillet, cook the eggs to your preference (scrambled, fried, or poached).
  4. Slice the cherry tomatoes in half.
  5. Spread the mashed avocado on the toasted bread.
  6. Top with the cooked eggs and cherry tomatoes.
  7. Season with salt and pepper to taste.

Notes

Avocado toast is best enjoyed fresh. Store bread and avocado mixture separately if needed.
