Description

A refreshing pasta salad packed with protein, fiber, and fresh flavors, perfect for a quick meal or a side dish.


Ingredients

  • 8 oz rotini pasta
  • 1 can black beans, rinsed
  • 1 cup sweet corn, rinsed
  • 2 cups fresh spinach
  • 1/2 cup Greek yogurt
  • 2 tbsp lime juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooked pasta, black beans, sweet corn, and fresh spinach.
  3. In a separate bowl, whisk together Greek yogurt, lime juice, salt, and pepper.
