- 8 oz rotini pasta
- 1 can black beans, rinsed
- 1 cup sweet corn, rinsed
- 2 cups fresh spinach
- 1/2 cup Greek yogurt
- 2 tbsp lime juice
- Salt to taste
- Pepper to taste
Instructions
- Cook rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cooked pasta, black beans, sweet corn, and fresh spinach.
- In a separate bowl, whisk together Greek yogurt, lime juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Serve chilled or at room temperature.
