Ingredients

- 2 cups cooked, shredded chicken breast
- 1 cup low-fat cottage cheese
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup grapes or 2 tablespoons sliced banana peppers
Instructions
- Place the cooked, shredded chicken into a medium mixing bowl.
- Add the cottage cheese, chopped celery, and chopped red onion to the bowl.
- In a small separate bowl, whisk together the Dijon mustard and apple cider vinegar.
- Pour the mustard mixture over the chicken and vegetables.
- Mix all ingredients gently until everything is combined and creamy. Do not overmix.
- Stir in any optional additions like grapes or banana peppers now.
- Season with salt and pepper to taste.
- Serve immediately, or cover and chill for at least 30 minutes for best flavor.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Add more cottage cheese or a splash of vinegar to loosen if the salad thickens.
