Description

A nutritious and creamy pasta salad packed with protein, perfect for lunch or dinner.


Ingredients

  • 8 oz pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1 cup cooked chicken or chickpeas
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Cook the pasta according to package directions; drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, and chicken or chickpeas.
  3. In another bowl, mix Greek yogurt, mayonnaise, olive oil, lemon juice, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh herbs before serving.

Notes

This salad can be prepared ahead of time and can last in the refrigerator for about 3 to 4 days.
