Ingredients

- 1 large chicken breast
- 3/4 cup cottage cheese
- 2 celery stalks (diced)
- 2 green onions (sliced)
- 1/2 cup shredded cheddar cheese
- 3 tbsp chopped fresh jalapeno
- 1/2 cup sour cream
- Juice of 2 limes
- Fresh cilantro for garnish
Instructions
- Cook the chicken breast using your preferred method until fully cooked, then shred and chop it into small pieces.
- While the chicken cools, dice the celery, slice the green onions, and chop the jalapenos.
- In a large bowl, combine the shredded chicken, diced celery, green onions, chopped jalapenos, cottage cheese, and shredded cheddar cheese. Mix well.
- Prepare the dressing by blending the sour cream and lime juice until smooth; pour over the salad mixture and toss to combine.
- Serve immediately over fresh greens or on low-carb bread.
Notes
For added flavor, marinate the chicken in lime juice and spices before cooking. Adjust jalapeno quantity based on spice preference.
