Ingredients

  • 1 large chicken breast
  • 3/4 cup cottage cheese
  • 2 celery stalks (diced)
  • 2 green onions (sliced)
  • 1/2 cup shredded cheddar cheese
  • 3 tbsp chopped fresh jalapeno
  • 1/2 cup sour cream
  • Juice of 2 limes
  • Fresh cilantro for garnish

Instructions

  1. Cook the chicken breast using your preferred method until fully cooked, then shred and chop it into small pieces.
  2. While the chicken cools, dice the celery, slice the green onions, and chop the jalapenos.
  3. In a large bowl, combine the shredded chicken, diced celery, green onions, chopped jalapenos, cottage cheese, and shredded cheddar cheese. Mix well.
  4. Prepare the dressing by blending the sour cream and lime juice until smooth; pour over the salad mixture and toss to combine.
