A fun and tasty way to start your day, these Mini Breakfast Omelets combine crunchy tater tots with fluffy eggs, making them perfect for busy mornings.
Ingredients

- 36 tater tots (for a standard muffin pan)
- 10 large eggs
- 1/4 cup milk
- Shredded cheese
- Seasoning to taste
- Meat & veggies of choice (e.g. breakfast sausage and diced bell pepper)
Instructions
- Preheat your oven to 400°F and generously grease a standard-size muffin pan.
- Place the tater tots in the microwave until soft enough to smash. Put 3 tater tots in each muffin cup.
- Smash them with the bottom of a small cup to form a crust, then place the muffin pan in the oven for 10 minutes.
- After 10 minutes, remove the tots from the oven and lower the temperature to 350°F.
- Evenly distribute your meat and veggies into each muffin cup.
- Scramble together the eggs, milk, and seasoning. Pour the mixture evenly into each cup, filling them about 90% full.
- Sprinkle shredded cheese on top and bake for 20 minutes, or until the eggs are cooked through.
Notes
These Mini Breakfast Omelets are best served warm. They can be stored in an airtight container in the refrigerator for up to five days and are freezer-friendly.
