Description

A healthy dessert combining coffee and chocolate flavors, perfect for mornings or snacks.


Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 1/4 cup strong brewed coffee (chilled)
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp maple syrup (or to taste)
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Instructions

  1. In a medium-sized bowl or a large jar, whisk together the almond milk, chilled coffee, maple syrup, and vanilla extract until well combined.
  2. Add the chia seeds, cocoa powder, and salt to the liquid mixture.
  3. Whisk everything together vigorously for about a minute to ensure the cocoa powder is fully dissolved and there are no clumps.
  4. Let the mixture sit for 5-10 minutes, then give it one more good stir to prevent the chia seeds from settling at the bottom.
  5. Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick and creamy.
  6. Give the pudding a final stir and serve chilled with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Stir before serving.
