Ingredients

- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or any milk of your choice)
- 1/4 cup strong brewed coffee (chilled)
- 2 tbsp unsweetened cocoa powder
- 2 tbsp maple syrup (or to taste)
- 1/2 tsp vanilla extract
- 1 pinch salt
Instructions
- In a medium-sized bowl or a large jar, whisk together the almond milk, chilled coffee, maple syrup, and vanilla extract until well combined.
- Add the chia seeds, cocoa powder, and salt to the liquid mixture.
- Whisk everything together vigorously for about a minute to ensure the cocoa powder is fully dissolved and there are no clumps.
- Let the mixture sit for 5-10 minutes, then give it one more good stir to prevent the chia seeds from settling at the bottom.
- Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick and creamy.
- Give the pudding a final stir and serve chilled with your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. Stir before serving.
