- 2 cups old-fashioned oats
- 1 1/2 cups milk (or almond milk for dairy-free)
- 1 large apple, diced
- 2 eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- In a large mixing bowl, combine the old-fashioned oats, cinnamon, baking powder, and salt; stir well.
- In a separate medium bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until smooth.
- Add the diced apple to the dry ingredients and pour the wet mixture over; mix thoroughly. If desired, fold in the chopped walnuts or pecans.
- Pour the mixture into the prepared baking dish and bake for 40 to 50 minutes, or until the top is golden brown and the center is set.
- Remove from the oven and let cool for 10-15 minutes before serving. Serve warm, optionally with additional toppings like maple syrup or Greek yogurt.
Notes
For different variations, feel free to add other fruits or swap nuts based on your preference. To make it vegan, use flax eggs and almond milk.
