Description

A delightful and healthy dessert, Smooth Chocolate Chia Seed Pudding is rich in omega-3s and antioxidants, satisfying chocolate cravings without guilt.


Ingredients

Scale
  • ¾ cup almond milk
  • ⅓ cup canned coconut milk
  • 3 tablespoons chia seeds
  • 40 g dark chocolate (about 70% cocoa), chopped
  • 6 teaspoons pure maple syrup
  • 3 teaspoons cacao powder
  • ½ teaspoon vanilla extract
  • A small pinch of flaky sea salt

Instructions

  1. Combine the almond and coconut milks with chia seeds in a bowl. Stir well, then leave at room temperature for 30 minutes, stirring occasionally.
  2. Melt dark chocolate over a double boiler or in the microwave until smooth and slightly cooled.
  3. Pour chia-milk mixture, maple syrup, cacao powder, vanilla, and a pinch of salt into a blender. Add melted chocolate and blend until smooth, about 30 seconds.
  4. Spoon the pudding into serving pots and refrigerate for at least 2 hours to firm up.
  5. Top with fresh berries, toasted coconut, or grated chocolate before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving as it may thicken.
